Variety profile
Introduced to Salento in the first half of the twentieth century, it took to the red soils of the Ionian coast of Salento and became the symbol of the territory, in Italy and above all in Europe. A symbol of the rebirth and the exports of a whole region that made itself known through Sieglinde. The variety has earned the PDO status of Patata Novella di Galatina (the second potato PDO in Italy and the first PDO for a new potato).

This variety stays firm when cooked and does not fall apart. It is the ideal choice for dishes that need whole potatoes, such as salads, oven-roasted sides or traditional recipes where the potato must hold its shape even after long cooking.
